An Asparagus Festival In My Kitchen


Stockton, California has an asparagus festival every year. It is where I tried asparagus ice cream for the first time. It was most likely the last time too, but hey I tried it! There was so much to see and do that I didn’t have a chance to try all the food. I did however, learn one important fact: Asparagus takes two years to harvest. It is a good thing my simple asparagus recipe takes only a few minutes to prep and eat. Its almost too easy..almost. Quick and Easy Asparagus This recipe can be prepared quickly in the microwave, or in a pan on the stove. The beef broth mellows the flavor of the asparagus turning into something a little more special. Ingredients: 1 bunch of asparagus 1 can/box of beef broth DSCN1035 1.Prepare asparagus by washing under cool water and then breaking the woody ends off of the spears.Hold the spear with one hand at each end and break it in two. It will break where the asparagus is tender. Discard the stems. DSCN1043 2. Place the asparagus evenly in a microwave safe baking dish. Pour enough beef broth into the pan to just cover the asparagus. DSCN1048 3. Cover with plastic wrap, leaving one corner open to release steam. Microwave for 5-10 minutes depending on the size of the asparagus, and the desired texture. I like mine to be just fork tender. DSCN1058 4. Drain asparagus and serve. Top with a little black pepper if desired.
